I won’t go so far as to say I “hate” crock pots, because they can serve somewhat of a purpose, but I use one like once every 2-3 years, and I spend a lot of time cooking

Eh, I make pulled chicken tacos all the time using chicken breasts in the slow cooker. It may not be the optimal use of a chicken breast, but it's still a pretty easy go to meal.

I have had good luck with chicken staying moist, but can see how easily it can go bad.

Thawed chicken is usually done in about 4 to 5 hours on low. I think the trick is to put the chicken in frozen. My wife would make these crock pot freezer meals where everything went into a bag and then frozen. Those seemed to stand up to 10 hours of crockpot.

Frozen is a little tricky honestly. You may end up with a pretty dry outside. Something like a frozen tender is going to be a little better and since it's not as thick, and not require the bump in cook time.

If you're going for a full 8 hour, partially thawed is probably the best best, but fully thawed at 3-5 Is definitely way better.

On the other hand if it's 7am and your breast isn't thawed yet, I don't think you'll be in that range where you have an easy 20 minute meal when you get home either. Dried out in the crockpot vs dried out on the grill because it's still mostly frozen... I'll take the crock pot because you can add enough to mask the dryness better.

Otherwise you're probably thawing under cold running water for 20-30 minutes later that night to get it at a state of grill (for breasts withh skin intact only please) or oven (skinless) readiness.
